We are Philip and Simon Thompson, brothers, and we are close to our dream of starting up our own distillery in order to put to test our spiritual hypothesis.

We’ve been somewhat spoiled over the years, having the opportunity to taste what many consider to be some of the best spirits ever bottled. We’d find flavours that are long since extinct from the modern high efficiency, good quality consistency of modern producers and wonder how. Wondering turned to discussion with experts all over the world, reading old books led to further research which lead to us hunting down those who worked golden ages at certain distilleries.

We do not seek to replicate the best ever made but to apply our understanding to create something new, inspired by the old ways.
How are we getting on? Not too badly. We have our building, Dornoch’s old 19th century fire station. We have planning permission, we’ve submitted for all the required licenses, etc and we’ll be submitting our building warrant in the next few days. Everything is lined up to get rolling with building conversion and equipment ordering once the building warrant and licensing comes through (fingers crossed). If everything stays on target then we should be producing in July or August 2016.
