Dornoch Distillery
Born in 2016 within the historic grounds of Dornoch Castle, our boutique distillery is dedicated to old-style single malt. Using organic heritage barleys, long seven-day fermentations, and direct-fired copper stills, we trade modern efficiency for deep character, oily textures, and authentic Highland spirit.
Independent Bottling
Under our Thompson Bros label, we source, mature, and bottle exceptional single casks and micro-batches at our Station Road warehouse. Named OSWA Best Independent Bottler 2024, every release is bottled without chill-filtration or added colour, celebrating total transparency and real warehouse craft.
Dornoch Bottle Shop
Located in Station Square, our physical shop is the home of Thompson Bros releases, rare single casks, local gins, and curated spirits. Whether you are hunting for a limited release or seeking expert advice from our team, it is the ultimate destination for Scotch whisky enthusiasts

Mystery Malt
