Nose: Lots of floral honey, beeswax, chamomile tea, dried papaya, sage, starfruits and kiwi. Some homemade elderflower corial and hints of oils and grease. Canola oil and fennel seed.
Palate: Tropical fruits, ripe kiwis, starfruits (again), gooseberries. The honey and wax continues with chamomile and fruit teas (slightly drying) glacier mints
Finish: Soft fruits, elegant and gentle oak char and spice
Circumstance is an amazing micro-distillery based in Bristol. They make atypical spirits which are extremely interesting and highly promising! This particular cask has been produced from 85% distilling malt & 15% raw distilling malt, fermented for 14 days with a Saison yeast before being very slowly distilled. Post distillation the team take great care with diluting their spirit before filling into wood, this is a clear indication of the care and attention the team put into every aspect of production.
