Nose: Extremely complex, atmospheric, and delightfully old-school. It drops you straight into an Italian antique shop full of deep rancio and wood oil, before wandering out into a West Coast tractor shed – all machine oils, metal polishes, and rough hessian sacks. There is a heavy, tactile note of damp clay that places you squarely in the pottery scene from Ghost with Patrick Swayze. This industrial weight is balanced by a burst of sweet-tart fruit: rich berry compote, sharp cranberry juice, and chewy apple and strawberry fruit leather.
Palate: Oily, savoury, and wonderfully bizarre. The arrival is led by the sharp, dry warmth of black mustard seed and the soft, slightly oxidised sweetness of a bruised yellow apple. A splash of Rose’s lime cordial cuts through the mid-palate, before it shifts gears into a distinct, leafy green herbal territory defined by star anise and fresh tarragon.
Finish: Long, lingering, and unashamedly funky. The savoury theme continues right to the end with texturing notes of wholegrain mustard, tart unripe berries, and a final, grounding echo of wet, earthy clay.
