Nose: A fascinating and highly original start. It opens with the distinct, slightly sour yeastiness of flat Geuze beer, which is quickly balanced by the rich, dark sweetness of Muscovado sugar. Underneath the funk, there is a zesty lift of Key lime pie and the dry, nutty aroma of shelled pistachios.
Palate: The Geuze note carries right onto the palate, maintaining that cracking lambic complexity. This is quickly layered with thick honey, flaked almonds, and the rich, oak-kissed weight of a big California Chardonnay. A touch of new oak and bright citrus develops, before giving way to the ultimate savoury comfort note: a fresh basket of Pizza Express doughballs dripping in warm garlic butter.
Finish: The savoury elements fade out gracefully, leaving a clean, quite sweet finish. It lingers pleasantly on a bright mix of yellow fruits, notably sharp starfruit and juicy, tropical papaya.
