Nose: Stewed cherries, plum tatin, Creme caramel, butterscotch popcorn, mandarins, maraschino cocktail cherries, green apple peel, some lime juice/zest, Creme Patissiere, walnuts, cinnamon doughnuts, aged oak furniture. Some waxes, polishes and quality honey.
Palate: Cherry party. Marachino, stewed, Morello, cherry cola, Cherry tart. More aged furniture, wax polish, plums, proper pressed pear juice, touches of clay, sweet stem ginger. Gentle warming spices; nutmeg, cloves, cinnamon.
Finish: Coating and gently spicey with plenty of stewed fruits and fruit cordials.
This stock was rescued from a life of obscurity from the back of a warehouse. The liquid has been resting in bulk since 2019 and was rescued and bottled in June 2022. We do not know the full history of the stock but it is very clear (on tasting) that the spirit was matured in Sherrywood.
Non-Chill filtered and natural colour. This spirit may haze at low temperatures and under dilution.
